Since its opening in 2013, Aji Inamura has been providing sincere quality and flavors, becoming a renowned establishment frequented by numerous geishas. The owner, who has gained experience as a chef in dining establishments in Minato’s Shirokane and Nogizaka, established his own restaurant in Ningyocho, his favorite neighborhood.


Natsuno: We visited the famous Ningyocho establishment, Aji Inamura, which has been using Natsuno’s chopstick rests for about 8 years. We had the opportunity to speak with the owner, Mr. Nakamura. Thank you for having us. When did you start using these chopstick rests in your restaurant?



Mr. Nakamura: It’s been about 8 years. Our customers, who appreciate good tableware, often ask, “Where are these chopstick rests from?” or “Where can I buy them?”During lunch, we see many female customers, but dinner attracts a wide range of patrons who all appreciate the chopstick rests.

Natsuno: Thank you. It’s been 8 years already! How did you first learn about Natsuno?

Mr. Nakamura: I used to visit Ginza often and noticed a chopstick shop. I wanted to use their products after they opened. Initially, we used ceramic chopstick rests, but they were frequently broken by staff, so I was considering lacquer or wooden ones. The recommendation came when I consulted with the staff at the Ginza store.

Natsuno: We’re glad to have been able to meet your needs. There’s a story behind these chopstick rests; they were made by a craftsman who also created trophies for the Hakone Ekiden.
Unfortunately, the craftsman passed away, making it impossible to produce more for some time. However, another craftsman from the same workshop has revived the production, and we’re now able to offer them again.

Mr. Nakamura: I had no idea there was such a story behind them. It’s reassuring to know we can continue using them.



Natsuno: Every time I visit Inamura, I’m torn between the delicious offerings of seasonal fish, vegetables, and meat.

Mr. Nakamura: Thank you. I personally select the ingredients from Tsukiji and Toyosu markets. We also take great care in preparing our rice.


Natsuno: Yes, the sweetness and aroma of the rice are exceptional. What makes it so different?

Mr. Nakamura: We use an ancient rice milling technique, which only removes the outer layer of the rice grain, resulting in a glossy appearance and a robust flavor.


Natsuno: That’s fascinating! The sashimi and tempura we had today were a perfect match. What’s the most popular dish?

Mr. Nakamura: Our crab dishes are quite popular, especially the hairy crab, which has a richer flavor than snow crab. Be sure to try it next time!

Natsuno: Sounds delicious! I’ll definitely order it next time. Are there any products you wish were available for professional chefs?

Mr. Nakamura: Currently, we’re considering updating our disposable chopsticks to better match our cuisine.

Natsuno: Understood! We’ll be happy to assist whenever you’re ready.
Today’s meal was impressive, not just the food but the entire experience, including the chopsticks and tableware.
