Since its opening on October 10, 2019, “GINZA BENI” has continuously provided a unique experience of pop art and high-end sushi to various customers. Combining authentic ingredients, craftsmanship, and a sensory experience that goes beyond just taste, customers are guaranteed a new kind of dining experience.

Today, we had the pleasure of speaking with Mr. Masahiro Mizobe from “GINZA BENI.”

Natsuno: Thank you for taking time out of your busy schedule. From the moment I entered your restaurant in Ginza 8-chome, I felt a change in atmosphere that made me straighten my back. I appreciate your time today!

Mr. Mizobe: Thank you, it’s my pleasure.

Natsuno: Thank you for selecting our chopsticks as the 5th-anniversary commemorative item, and congratulations! Could you tell us why you chose Ginza Natsuno’s chopsticks for this special occasion?

Mr. Mizobe: Of course! I’ve actually been to the Ginza Natsuno store and thought it would be great to use the chopsticks as a gift. They seemed perfect as a return gift for our anniversary celebration.

Natsuno: Thank you for your selection. We were surprised when you placed an additional order right at the first delivery. Your quick decision-making in such a fast-paced environment was impressive.

Mr. Mizobe: I’m glad our customers were happy with them!

Natsuno: Could you share why you decided to open a high-end sushi restaurant in Ginza?

Mr. Mizobe: Previously, a classmate of mine opened a sushi restaurant in Ginza, and I joined him. After working at the sushi restaurant, I did some part-time dishwashing at a Chinese restaurant, sacrificing sleep to work. Around the time I thought I wanted my own restaurant, I was fortunate to receive an offer from Mike at “TRAX TOKYO,” which led to the founding of “GINZA BENI.” I was already 45 at the time, and I’m deeply grateful to Mike for the opportunity.

Natsuno: There are over 500 sushi restaurants in the Ginza and Shimbashi area alone. What makes your restaurant unique?

Mr. Mizobe: Nowadays, many customers expect sushi restaurants to serve delicious sushi. I actually think of myself as far from being first-rate. I’ve never worked at a top-tier restaurant, but I strive to reach that level. I constantly research the right balance of salt and vinegar to bring out the best potential in the fish and rice.

Not just the sushi, but also the desserts and coffee are carefully selected. I hope people enjoy “SUSHI BENI,” where the dining and space come together as one!
