Today, we visited “Wa no Shun KISAKU,” a well-loved restaurant in Yurakucho with 14 years of history.

Natsuno: Thank you very much for your time today. Could you tell us a bit about “Wa no Shun KISAKU”?

Owner: We founded “Wa no Shun KISAKU” on May 15, 2010, thanks to a fortunate series of events. We chose to open in Yurakucho, Chiyoda Ward, for a very specific reason. Instead of a ground-level shop that catches people’s eyes, we wanted a quieter atmosphere on an upper floor. This setting allows us to create a hidden gem that regular customers can enjoy, which is why we chose this location.

Natsuno: Was there anything in particular you focused on when starting the restaurant?

Owner: Our core concept at “Wa no Shun KISAKU” is to create a place where regular customers can truly enjoy themselves. We offer seasonal omakase courses that highlight the freshest ingredients of the moment. We always aim to provide a dining experience that lets customers fully immerse themselves in the season’s flavors.

Natsuno: What would you say is the key point for guests to notice in your dishes?

Manager : Our focus is on showcasing the seasonality of our ingredients. We source our fish from Ito and Tsukiji, selecting only the freshest and highest-quality items. We make every effort to procure the best ingredients of the season and bring out their natural flavors to the fullest. I hope guests can enjoy the essence of the season through all five senses.

Natsuno: Could you share some insights into your restaurant’s atmosphere and interior design?

Owner: We place a high priority on creating a comfortable atmosphere. Our interior is simple yet warm, designed to help guests relax and enjoy their meals. We pay close attention to lighting and table arrangements, ensuring that every visitor feels at ease and enjoys their time here.

Natsuno: What is your vision for the future of Wa no Shun KISAKU?

Owner: We want to remain a beloved spot for our regular customers while also welcoming new guests. Our goal is to continue providing services that allow customers to enjoy the flavors of the season and the finest seasonal ingredients. We aim to create a place where each visit offers new discoveries, encouraging guests to return time and again.
